Cartuxa Reserva Red Wine This wine carries the prestige of the Carthusian monks, who since 1587 led a solitary life of prayer at the Monastery of Santa Maria Scala Coeli in Évora. It is the result of a careful selection of grape varieties from the oldest vineyard plots of the Fundação Eugénio de Almeida. First produced in 1987, it reflects the tradition and quality of Alentejo wines. Producer: Fundação Eugénio de Almeida Region: Alentejo, Portugal Style: Red Wine Grapes: Alicante Bouschet, Aragonez Bottle Size: 75cl Alcohol: 15% Serving Temperature: 16–18ºC Vinification: Made from carefully selected Alicante Bouschet and Aragonez grapes from the foundation’s oldest vineyards. When fully ripe, the grapes are hand-harvested and transported to the winery for total destemming and gentle crushing. Each variety is fermented separately in stainless steel vats and French oak fermenters at 27ºC, followed by 15 days of maceration. The wine is aged 15 months in new French oak barrels and 36 months in bottle before release. Gastronomy: Meats: Ideal with grilled red meats, lamb roasts, stews, and game (venison, wild boar). Structured and balanced, perfect for hearty dishes. Cured Meats & Cheeses: Pairs with aged cheeses, cured hams, sausages, and charcuterie boards.
