How to Cook Boned & Rolled Pork Leg Preheat your oven to 220°C (200°C fan). Prepare the joint: Score the fat rind, rub generously with olive oil and sea salt. Start with high heat: Roast at 220°C for 20-30 minutes to kickstart the crackling. Add vegetables & liquid: Surround the joint with chopped onions, carrots, Celery, and garlic. Pour in about 500ml of white wine, cider, apple juice, or water. Reduce heat: Lower oven to 180°C (160°C fan) and cook for 50-60 minutes per kg. Rest before carving: Allow the pork to rest in a warm place for 20 minutes before slicing. Use the juices and roasted vegetables to make a rich, glossy gravy.
